Moelleux de Revard

The Moelleux du Revard is made out of raw milk from the Bauges mountains – just north of Vaujany, near Chambery – under the same conditions regarding breed, diet and geographical zone as the Tome des Bauges AOP. It is a raw milk cheese produced according to traditional procedures in a small cheese dairy at the foot of Mont Revard. Its traditional ripening demands all the knowledge and skill of the affineur and makes this cheese, with its smooth, creamy paste and fine, fruity taste, akin to the Vacherin des Bauges, a true delight to the senses. It has a band of pine bark wrapped around it, imparting a resinous flavour.
